Vineyards since the end of the Middle Ages, the “Clos de l’Évêché”
extends around the property.
Winemaking and Ageing
Harvest date: 6 September 2022.
Mechanical harvest with selection, light pressing, cold settling and transfer to barrels.
Alcoholic fermentation and ageing in 80% new oak barrels for 11 months.
Malolactic fermentation 100% complete.
Light filtration and bottling on 4 August 2023.
Alcohol content: 13%.
Tasting
Its colour is a golden green, and its fragrance is steadied by notes of honey, yellow flowers, lime blossom and acacia. On the palate, it is reminiscent of fresh butter sprinkled with fleur de sel, with a precise, enveloping juice. Spherical, it contains everything: fruit, a fine texture, amplitude, mineral precision, and structured length. Upon opening, it evolves towards light bitters and candied lemon flavours. It plays in the major wine classes.

Aperitifs, white butter fish, cooked cheeses.
